I only have one "top title" in my possession, but I have a list!
The one I actually have and am proud of: Master Angler. I got this back around 2016 or 2017 and it's been on my main character ever since...
...Until about 24 hours ago, when I put on the title whose existence I don't actually support because I don't think limited-time content like that should be a thing. But I paid real money to engage in the messy "event" for it and so will use it even if I'm not "proud" of it, darn it. I'll probably go back to Master Angler in a few days: Wall Breaker
The title I'll never have but really, really, REALLY want because it fits my main perfectly (an immortal with a literally magical voice): of the Undying Song. You have to knock out basically all the Veteran Vateshran Hollows achievements for this one. Combat is my least favorite part of gaming. I especially dislike running-the-gauntlet type of stuff.
Bonus: the title I'll never get but want badly for Fashion Scrolls purposes: Emp(peror/press). PVP is my other most disliked form of combat. I want the dye, I want the costume, and I want the throne. I do not want them badly enough to engage in the slogfest, frequently riddled with "insider trading" of keeps, that is the Emp push grind.
Regarding those last two especially: look, I'm in my forties. My fingers, hands, and arms can't take the twelve-hour playfests they used to, back when I was in my thirties playing this game's closed beta. Just thinking about trying to grind out arenas and Cyrodiil achievements makes the hand injury I'm still nursing from pushing myself too hard in ESO a while back start throbbing. My "dark" ESO confession is that I would TOTALLY let someone else play my account to get the things I want but know better than to try doing myself, if there were someone I trusted for such things. I don't care about bragging rights because I only play for and largely by myself. If I want something, it's pretty much always going to be because it's something I can use for housing or other Fashion Scrolls content.
(I would never trust ZOS to implement such a system safely, but I frequently wish players could temporarily trade "jobs" on their accounts, in exchange for gold or other rewards between players. I love doing the activities other players lament, like fishing, treasure maps, surveys, Antiquities—and I don't even mind doing inventory Tetris across 20 characters or multiple accounts. In return, someone else playing content for me could experience the thrill of unlocking achievements like Emp or veteran solo arena or DLC dungeon content clears for the first time all over again.)

I just use what fits my character roleplay-wise. No need for it to be fancy. In fact I wish there would be more "simple" titles related to professions, factions or ranks that exist in Tamriel's society.

Breathless because doing the Graven Deep final boss HM as a tank was simultaneously the most annoying as well as enjoyable PvE activity that I've done.
Privateer because Shipwright's Regret previously held that distinction.

This is the same for me. Especially +++more simple titles please. I love the single-word adjective ones and the professions.
As for being proud of any titles, I'm not really proud of any of them in the current game state. The Brilliant fits my main perfectly, but I'm not proud of it.
I love the dungeon, but it's just not hard to achieve compared to SCP and FL back in the day when a good group wasn't skipping any of their key difficulties; and funnily neither of those even give titles.

Flawless conquerer, just because it was really hard at the time I did it. Not sure if it was in the late veteran or eraly cp era. It felt like ages to clear vMA the first time and many many more hours to get the title.
Undying Song as second, vateshran was and is still a lot of fun for me.
coming to group content it's Gryphon Heart and Dro-m'Athra Destroyer, where vMOL is still one of my favorite trials, would really be cool for it to get an upgrade with an increased difficulty to force player to play all the cool mechanics again
Mine aren't about being proud of an activity or objective, just the two that I like best:
Tin Soldier
The Wretched
The first suggests someone who pretends to be or plays at being a soldier, and the latter speaks for itself. They aren't aggrandizing or heroic.
(Of course, I also keep asking for armor appearances inspired by movies like Mad Max with the broken, rusty, and gruesome look.)
I would add a third if I knew of another tile along the lines of the above.

My favorites are:
- Shield of the North (my main is my Skyrim-born Orc Tank so it fits him perfectly. I am never taking that title off)
- the Unchained (I was so proud of getting that in the first place, and the character I gave it to is my escaped Telvanni slave so it very much fits him)
- Dawnbringer (another one I never thought I’d ever get, and I love Kyne’s)
I have no idea what I did (if anything) to earn them, but I just think they're fun.
As far as my favorite "braggy" title, I suppose it would be
3. Savior of Elsweyr
Although I earned it without needing to solo the six world bosses in Northern Elsweyr-- which were much too challenging for me to solo at the time-- a few years later I decided to try soloing some of the world bosses that I hadn't been able to handle before, and discovered that I'm now able to solo all six of them. So now I sometimes like to ride around Northern Elsweyr soloing the world bosses one after the other, just for fun. The only other chapter zone where I can solo all six world bosses is Vvardenfell, but I didn't figure out how to solo Wuyuvus on my own-- someone in these forums suggested using Precognition (the morphed ultimate from the Psijic skill line)-- so even though I also enjoy soloing all six Vvardenfell world bosses, it feels like slightly less of a personal accomplishment.
