Hi, after much testing with different combinations of Add-Ons, I have narrowed down some setups that run consistently without triggering the SAVE ERROR. In general, the SAVE ERROR triggers when too many Add-Ons are Enabled, and I've written my thoughts in a thread about the Save Error
here (under "Avoid installing too many Add-Ons"). In short, I recommend Enabling ONLY the Add-Ons for the content you are currently doing. E.g. there is no need for Dolgubon's Lazy Writ in Trials/Dungeons, and no need for Fancy Action Bar when doing Crafting / Overland. Less is best.
These are only suggestions and you may swap out some entries for others if you prefer them. You may also use any lesser-numbers of the mentioned Add-Ons as they do not conflict with others within the setup. There are so many possible combinations - these setups are not set in stone - if any start to break, then it may require removal/replacement of some Add-Ons causing the problem (maybe due to an Update).
Please do add your own tested, working, no SAVE ERROR setups to this thread for others to try out, while we wait for an official fix to the SAVE ERROR.
NOTE: When switching between Add-On setups, Download the old PS Cloud Save and overwrite the newest one (Download from Cloud Storage to Console Storage). This allows the next setup to be batch loaded (all 7, 8, 10 or 11 Add-Ons simultaneously Enabled all-at-once, without SAVE ERROR, and without needing to Enable them sequentially one-by-one), built off the old 'clean' Save file. Refer to this thread, following the general outline of steps described
by msetten in "Preliminary Procedure" and "Save Error Occurred". If you have PS+, use Cloud Save to your advantage and shorten the steps to get back to the 'clean' state.

(Next for testing will be whether I can safely save single Add-On settings (eg. Minimap, Fancy Action Bar+), one-by-one into a baseline PS Cloud Save file, and use that to batch-Enable Add-On setups. This will save a lot of Add-On config time if it doesn't trigger SAVE ERRORs).
Edit: changed 'Attemtps to Install...' to 'Attempts to Enable...' . Add-Ons were already pre-installed and test method was by batch-Enabling or sequential-Enabling Add-Ons.
