Playing through Summerset story in 2025 is wild

Then there are the amazing personal melodrama quests, plus the one in the main quest.
The absolute peak ESO writing, even if it is perhaps a little dark for some people's tastes.
Anyway, its sad we haven't returned to anything approaching it since. It isn't the world ending conspiracy stuff that makes it good its all the personal tragedy that it perfected.

    This, the Ayleids that enslaved most of the mainland human races were a splinter group from the Altmer. Queen Ayrenn is the outlier.

    It has nothing to do with that time period IRL, those dynamics were already established in ESO when Auridon was being written, so before 2014. Auridon is very similar to Summerset in that way, even focusing on resistance to Ayrenn's decree to welcome outsiders.

    I just finished replaying all of Summerset, and it really was great. Solid, memorable sidequests and overall environment. The main quest, like with many Chapters, isn't the highlight for me.

    It's not a "new thing" adapted/written according to what's currently happening in our world,

    Pretty much everyone is racist in the Elder Scrolls. It's especially obvious in the older titles like Daggerfall and Morrowind

    As for the topic at hand, many Altmer being supremist and generally awful was not at all new or unique to Summerset. As mentioned, it was also written into the story in Auridon, years before Summerset. The Thalmor were central to the main story in Skyrim. And it's been discussed in the lore much earlier than this.

    Some do, some don't. Sometimes fiction is intended by the author to transport a message about a current event or topic, sometimes not. Always assuming that everything is supposed to be a message, maybe even a moral message, leads to a new problem: If authors describe things which are considered "immoral" in the real world neutrally or even positively from a within-the-narration standpoint (because the inhabitants of that fictional world would think that way) in their story, they'll get accusations to support or even promote these things. This does sometimes already happen, which sometimes makes authors shy away from actually depicting foreign worlds with foreign morals already, because of the possible "scandal" that might ensue.
