Ah. There might be a slight misunderstanding here.
The inventory on the right is your inventory. You are their Lydia, you're carrying their stuff.
If you just open your inventory, there's a Companion Gear tab where you can see all the companion gear that you are carrying around. The companion only carries the gear that they have equipped. If you unequip it, it goes back into your own inventory, and so you can give it to another one.

It's an annoying bug that only sometimes happens. Usually it's not an issue.

Are you running any addons? The team is taking a look and wanted to know.

When you open a crafting interface (such as a Blacksmithing Station) you lose the ability to remove equipment from your Companions. This also occurs when you talk to a Deconstruction Assistant.
I found that an easy way to fix this is to open your own Inventory screen. You don't need to equip or unequip anything from your own character; simply opening this menu will unlock the ability to unequip items from your Companions.

I would sometimes run into this bug myself because I routinely use a Merchant (to sell junk), then a Deconstruction Assistant (to deconstruct remaining junk), and sometimes then try to change Companion gear without opening my inventory first, as you'd expect since there's no reason to open your own inventory when you can only equip Companion equipment from their inventory screen.
I think the issue is that the game stores the last opened menu type as a variable somewhere in memory — maybe the Companion inventory menu screen fails to properly update the variable, so it treats the Companion inventory menu as the last type of menu that was opened. Since Companion equipment can't interact with the crafting system in any way, maybe it just defaults to doing nothing when Companion equipment is interacted with in that context.
Regardless, addons aren't the culprit if the bug occurs without them enabled.
