Exploration from a new perspective: Only works if the maps designed for it and vast enough to warrent it, as it stands the zones in ESO are neaither thus it would be more fustrating and annoying than anything else.
Time-Saving: Shadow rider passive lets you ride though mobs without getting attacked, even if you were overland mobs just melt in less than a second, as for the daily tasks located "far apart" I've yet to encouter a single daily quest where the objective was not within 90 seconds of a wayshrine.
Safe Travel: "High level areas" wut??? outside of Craglorns "Group Area" the entire game of ESO's overland is one singular level which offeres about as much resistance as a wet paper bag, and again, shadow rider passive lets you slip past mobs without aggroing them very easily.
Freedom Of movement: "Not bound to paths or roads" you mean like you're already free to do in game? there's literally noting stopping you from veering off the road and charging/riding/dancing across the rough and wilds.
Spectacular Views and Screenshots: would work if it wasn't for the fact that unless you're willing to go under the hood and tinker with files ESO's render distance is....blek thus you'd end up with things that are less than...appealing from high into the air
What do you think? Simple, it wouldn't work in ESO at all, at best it'd be a waste of time and resources, at worse it'd break the game in 44 different ways or some other such nonsence
I doubt they'll ever add flying mounts but gliding could be interesting and useful. Yes, limited application, but better than nothing. Maybe add air currents that you can use for lift for a bit to go further but not enough for sustained flight. We have a lot of zones with cliffs and ravines (looking at you Elsweyr).

Reasoning why: All spontaneous things in WoW died when flying mounts were introduced. The Burning Crusade and Wrath of the Lich King did well and they had flying mounts but it was because the world was still full of people, many people leveling alts (no RDF etc) , influx of new people all the time and so on. After RDF got introduced it all died down because RDF + flying mounts means people don't see / meet each other anymore out in the open. Like you said, you fly from destination to destination. Overland content is already super easy in ESO and the fact that you're ground bound and need to use wayshrines to get by is just marvelous.. You see the world, you don't just glide over it all to just kill x and go back to town where majority of the population will just float around AFK. People in WoW enjoyed everytime they were 'grounded' while leveling.. the likes of Cold Weather Flying , etc.. It is super handy yes but it's obvious that people want MMORPGs of old like Classic WoW (and the first 2 expansions... but mainly Classic WoW) The grind is welcome in MMORPGs, the struggle is needed in MMORPGs and so on. I think they should make overland content HARDER because honestly, you can already skip all creatures by just running by with your ground mount now.. Imagine for example Sky Shard hunting... Some locations are super tricky and hard to get to, which makes it fun... With a flying mount you just.. land and off again?.. Aww.. no thanks.
