Do you schedule Time Off for Chapter Launches?

I'm a teacher, so I'm usually already off in June when the new chapter launches.

I have health issues/disability so not working right now. If I was working and caught up on questing, I would definitely take time off for a chapter launch, or a new TES/Fallout/Mass Effect/Dragon Age game. Hopefully one year I can do the zone quests day 1

I haven't bought a chapter on release for last couple of years; I usually pick it up at Christmas time or the following april depending on content.

There doesn't seem enough in this chapter for me to pre-purchse and, with the downgrading of eso+ with less dlc releases per year, I'm not even sure if I will buy this chapter at all.

So, no - no time off required.

When you're retired, every day is Saturday (except Sunday). No time off needed.

I'm retired, so I don't need to schedule time off.

When I was working (pre-ESO), I would sometimes take time off when a single-player game I really wanted to play was released.

I never played games at all when I was working. It wasn't worth the lack of sleep - I had an hour drive to work, a lunch break (variably half hour or full hour, depending on where I was working), and an hour drive home. And since I tend to be slightly obsessive when playing games....

Imo it's quite a bad idea to take time off for a chapter release.
Rarely had we had a smooth sailing release, either some crazy bugs, unstable servers due to insane increase in population or just the day 1 patch taking like 14+ hours to apply.
It's not like there's an event going on you need to login and snag everything in sight the game isn't going anywhere, while true we got tons of scribing stuff to farm, it's mostly locked behind dailies, and you get less % at a drop the more you do so doing just 1 is 100% so doing more is like counter productive unless you wanna be done asap.

I am retired, so no need to take time off, I used to make preparations for playing my Tomb Raider games and taking a holiday at that time, I used to put time aside for the launch of a new Elder Scrolls game, making sure I would not be disturbed while exploring the new game. But ESO, no I would not do either, chances are the game will either not be available most of launch day, or not be playable for me, because of 'server' issues.
