I’m not online atm to give proper instructions, but I believe it’s done from your inventory. If my memory serves correctly. There’s a tab at the top of your inventory you’d choose and drag over whatever pets or emotes you want to the wheel that’ll also be showing on your screen.

I can't log in to the game right now to check, but it I recall correctly, it was something like this:
    • Go to collections (U key)
    • In collections, find emotes in the list on the left side.
    • Hover on the emotes with your cursor
    • Click on the key the game suggest (I think it was F, could be E) to assign emotes. The menu will change somewhat.
    • Drag the emotes you want to your wheel

Gotta go to the Help menu believe it or not...in one of the sub-menus (I'm not in game) you can find and choose all the "/something" emotes and drag them over.
