I'm just disappointed that anyone who buys the new chapter now will get what looks to be a reasonably nice mount, while my pre-order months ago just got me the pizza mount. I wish I could trade one for the other.

If you pre-ordered you get both mounts. You just don't get the second one until Necrom releases.

I have done - but not turned in - Mages Guild, Fighters Guild, and Undaunted delve dailies on all my 18 characters so that they will be able to level those skill lines on the 2 new companions, which I plan to unlock as soon as possible with all my characters.

I don't prepare anything.
First, I want full surprise and try to avoid spoilers (what is close to impossible nowadays since people want to know all before it starts) and second, am not even sure I will do one, because I don't like much the leveling up in ESO and I'm not sure I feel to start a new char.
