✭✭I actually think guars are great- my beef is more about the mindless reskins.
The thing is, that there is so much rich lore, so much Tamriel to mine for inspiration. You can easily come up with some really great ideas just thinking about the different regions and ecologies in Morrowind and Shadowfen.
What we get instead is the same rehashed one-size-fits-all skin applied wholesale to everything, and some blurb with [enter random lore name here].
The model is forcing LORE to adapt to whatever glowy markety thing that some contract artist who has no idea about the feel or the lore, and throwing it at the lore people to have it somehow make sense. In doing so you just bastardise Elder Scrolls and lose the authentic feel, and make it seem like a deeply unsatisfying sell-out.
It should be the other way round- start with the lore.
The authenticity is a big appeal of the Elder Scrolls, and this sort of thing dispenses with it. My biggest problem in this game that I actually love is this ongoing trend to treat lore as dispensable, or to repeatedly and continually contrive it to justify "anything goes" or "if it sells, its lore".

The two best mount options in the game are senche (not the raht variety) and guar/khagooti.
If we are going to get rid of mounts, camels should go first, and maybe bears.
They already got rid of camels in the crown crates. I found that disagreeable, as they're some of my favorite mounts because of how funny they look, how funnier I look riding them and the fact that they'll spit when you hit the jump key while still. For example, the lizard-camel spits hist, the skeletal one lets out some sort of reddish miasma and the Anka-ra barfs sand. It's a great way to show your friends you like them! Besides, I have it on good authority that camels are the smartest creatures alive and they're capable of performing complex mathematical operations while idly ruminating (I wonder if anyone's going to get the reference).
