I think you are mistaking CP 3600 as some sort of goal rather than just a hard cap of the number of CP you earn.
Dungeons, Trials, PVP, Arenas, Daily Quests, are all repeatable content with achievements you are meant to strive for or just do (in the case of PVP). If you can do all of these things at whatever CP level you are at, then CP level is not really important for you. Add to that all of the collections stuff, overland achievements, the trading market, etc, there is a ton of content for all types of playstyles.
If playing that repeatable content or knocking out achievements isn't really something you want to do, maybe this isn't the type of game for you once you've completed questing. And that is ok too.

I agree with this. Housing, Exploring, Quests, PVP Cyrodiil, PVP Battlegrounds, PVP Dueling, Achievement Hunting, Cosmetics Farming, Playing the Economy, Crafting, Heists and Sacraments, World Bosses and Zone Events, Antiquities, Dungeons, Trials... The list of things to do is long and grows each year.
But also, I think it is unreasonable to expect one game to provide infinite entertainment. This game comes close if you engage with all of its systems and content, but still, no one game can be everything infinitely. If you find yourself bored and running out of things you enjoy doing, then take a break, play something else, and give it another go at the next update.
I avoid PvP, not even going to consider doing it.
Fully completed all overland zones. Fully completed some dungeon sets, around 80% progression on others (those i dont need). Slowly buying recipes and motifs, as i have no interest in them, just like to buy things cheap. Have zero interest in achievements, as it is even less useful than cosmetics.
In another game i am playing since 2012, there are over 100 skill lines, i am still leveling them. And skill lines can be augmented with new effects, which also takes time.
So next update brings card game that only 18% of players are interested in (excluding me) and 2 new companions (only 1 of them will be accepted for DD role). I think i will be done with it in less than a month, playing 1 hour per day.
Everything except achievements, took me around 2 years of relaxed play. For the past half of year i was only collecting 1 CP point per day, as i collected everything else i was interested in.And really, by fully completed, do you mean all achievements, all collections (monster trophies, skyshards, lorebooks, side quests), or do you mean you just burned through the main stories? Because actually completing everything takes a ton of time. I know this from experience having done everything in every overland zone possible. All books, all skyshards, all quests, all everything. And that all took most of my 5.5 years playing the game to do.

Agree except I think Cyrodil is better for starting PvP if you are in an nice PvP guild, solo no and so much worse with the group nerf. PvP has a very steep learning curve at first—I recommend starting with battlegrounds, not Cyro. And IC has a lot to farm and achieve and discover if you haven't done it.
You also might have fun joining a good social guild. Have you done the solo arenas on vet? Gotten master angler?
Otherwise, it's okay if you're out of content you're interested in. It happens.

Unfortunately the achievements change has reduced substantially the amount of things a veteran player can do by eliminating the main point of rolling multiple characters, and even those who benefit from it in being able to roll new builds with almost instant levelling to 50 together with immediate full CPs and achievements etc. have little to do except play the new character instead of the old one.

I spend 20-30 mins a day to get another +1 CP, to 1000+ total CP.
I completed all overland. Farmed all dungeon sets i wanted, made them golden. Maxed every skill tree (except PvP, since i avoid it). Unlocked all class skills for companions except ultimates. Created a build for every role and played it extensively. Been a vampire, now a werewolf.
For me there is nothing to strive for, and i am only 1340 of 3600 CP. I would gladly play ESO more if there was meaningful progression, but now i am thinking to stop playing until next big DLC goes on sale.

In terms of dungeons and trials, DLC trifectas are the pinnacle of PvE end game. I'm assuming you've already done Planesbreaker, Godslayer, Gryphon Heart, Emperor, Grand Overload, etc., clearing 100% of available achievements up to this point, and are eagerly awaiting Dreadsail Reef and the new chapter? If that's the case, I somewhat agree, especially now with the introduction of account-wide achievements (not exclusively that), I'm seeing a lot of end game raiding groups going through and overhaul at the moment.
