Also from LOTRO i think? (may have been only in concept stage?) the abilities for players to "take over" NPC's / monsters and control them, including levelling up monsters by killing players with them.
The Alternate Advancement (AA) systems from Everquest and pre-NGE Star Wars Galaxies, where you could level your characters entirely through crafting or other skills without ever having to kill anything. SWG, in particular, had one of the most robust (and very ahead of its time) crafting systems of any MMO before or since.

Massively impractical nowadays, but in The Realm Online when it was still being run by Sierra, GM's used to hold trivia contests in chat and award rare items as prizes, or throw random events in-game for players' birthdays / holidays/ whatever. For instance, at Easter, some monsters would randomly drop Easter Eggs with special loot.

I'm confused . . . while I understand wanting ESO to be its own thing, do you not want larger raids, seemless zone traveling, and more earnable options in game (mounts/pets/hair styles)?
Do I want endless reputation grinds from WoW? Absolutely *** not lol. But I would love to have crown crate mounts or other crown store mounts be earnable in game. I think the crown store is necessary since the subscription is "optional." But, to have it as fleshed out as they do is beyond excessive which 99% of ESO players will agree with. Also, I'd love a true open world similar to new world without loading screens. That'd be great! And more class identity in regards to class-specific quest lines, item sets, etc. would be great! But I definitely don't think that ESO's servers could handle 25 man raids since they're barely able to handle 12 currently lol. Cheers!
