you cant sacrifice tharn, but you can sacrifice sai which does add some additional dialogs with him in eslweyr story
i think lyris is the same way with the skyrim story
you dont run into the prophet after the main story (yet), so theres no special dialogs for that

Actually,You run into the Prophet at the very end of the Orsinium questline as a ghost and he hints at the future chapters as Morrowind hadn't come it yet.
I chose Varen my first play thru, then after that always Sai, really dislike Sai with a passion!
Eventho he ran out of prophecies, I still have some glimmer of hope that someday we see Varen again/or his ghost in a side quest
