Please pardon my ignorance if this topic has already been addressed, but I'd like to talk about boss fights.
1. Millions upon millions of hp, cheap time-sink
2. Tedium, as in rotating skills with all the spontaneity of a factory assembly line
3. Lastly, I typed this while I was waiting for a boss to drop dead.
I don't have a problem with high-health bosses, what irritates me is when bosses have invulnerable phases, or when they jump all over the map. Those feel like cheap mechanics used to pad and draw out fights, instead of use of more engaging mechanics.

I rather enjoy a good chase, but I'm with you on invulnerability. What I find really obnoxious is chain stunning/immobilization. That's about the time I start looking for chores to do around my house (so I suppose all is not lost)
Most bosses can be killed reasonably fast if the group has a decent dps and do mechanics especially in normal content.
Most invulnerability phases also have you do mechanics to remove the invulnerability. Generally those are more meaningful and important while doing vet content.
I don't mind high-health bosses as long as they can be whittled down over time. If they also have constant health regeneration (as opposed to something you can interrupt), like some/most/all? of the troll bosses, then it's basically just a DPS check, and I hate those because my DPS isn't good enough to pass their check.
Massive HP sink + tedium (once you've learned the phases/patterns/etc; frustration before) is why I've never been very interested in "Boss Fight" games (like Monster Hunter or *Souls) or dungeons/raids/arenas/etc.
i have my main house (grand topal hideaway) listed in the housing tours, it has multiple target dummies, scribing altar, and grandmaster stations (fully filled out with current game), as well as almost every antiquity furnishing on display to preview them
in progress: acquiring mundus stones (currently only have the thief)
i think this is a reason people get more into pvp, because the human AI is a lot more difficult to play against than the NPC AI lol
of course with the pvp we have the performance issues
Pretty much, yeah. PvE is fun but like... I like a but of random and counterplay in my content. Beat that super hard dungeon and it's not going to mystically step up it's game and adapt to my strategy next time.
