In the past, I found that the summoned wolves did count for certain endeavors, such as killing foes with class abilities. I don't think I ever checked them for the beasts endeavor, but for the class abilities endeavor I was looking for easy-to-kill enemies because my DPS is low and my class abilities are rather weak, so the wolves in Stros M'kai seemed like a good choice.
