You know what We've never seen in an MMO like.. ever?
Centaurs...
Crowfall had (has?) centaurs. So, some of us have seen them in an MMO recently.
If ESO devs wanted, they would've already added bestial playable races or anything other than a humanoid. If you look at all the races they are just various versions of a human-shaped being (orcs = green humans with tusks, elves = humans with weird height, skin and ear differences, etc.)
If you zoom out, we pretty much just have 2 races: Elves and Humans with a whole bunch of variations.
My guess is they want to keep it simple and somewhat monotonous like this and not go the high fantasy route in terms of playable races. Also, their stories seem to always revolve around politics and other social issues in kingdoms. So having humanoid races on an equal footing in terms of strength, wisdom and cunning creates and easy setup for an endless war and conflict, but still capable of unification as needs arise. Basically Game of Thrones without the indulgence of flesh (I hate Game of Thrones).
I personally am a big fan of faction warfare between evil and good, so I love the division of elves and men against orcs and goblins in LOTR universe. I always played Alliance in WOW, and in other faction-based games I chose factions with the fairest races (which mostly involved elves). So, I'd love to fight against a faction of bestial races and carve my path to victory in their blood. However, it's pretty unlikely that I'll be able to do that.
One of the main things I hate about ESO is the ability to be on any alliance and play through the quests/story of opposing alliance. You can literally see real world just spewing its puke into ESO, if you look closely. Every time I come upon a quest that tells me to infiltrate Dominion soldiers and/or kill them, I feel kind of sick and it just turns me off from the game. Lately, I had that a lot due to traveling all over Tamriel for antiquities, treasure maps and surveys and occasionally jump into a delve or a public dungeon for some skyshards, so I meet a lot of these unsavory individuals.
I am not well-versed with the Elder Scrolls lore as I find it not being very interesting or immersive. So, I am not sure if this can be changed and create a true separation between factions. I still read through quests I haven't done before and read occasional journals and letters, but I generally don't really care what happens in Tamriel in the grand scheme of things because of the fact that most of what your character does doesn't matter because you'll undo it later on the other side of the map.
The reason you won't see Centaurs as a playable race in modern MMOs is because mount collecting is too popular. You can't have a horse riding a horse, and you don't want to deny a significant chunk of your playerbase the ability to collect and show off rare mounts (or in ESO's case, give them a reason not to spend all their money on crown store and crown crate mounts).
