I don't believe they said that. I don't know what video you mean but Elder Scrolls only has one timeline. Or several, depending on how you view Dragon Breaks. The events of ESO however still happened within the same reality as the main line titles. They're definitely not spinoffs, if Bethesda has anything to say about it.
Events from previously released Elder Scrolls titles aren't spin-offs or separated in a different time line from ESO, they just happened in different Eras. I suspect it's this.
It was certainly brought up a lot if ESO is considered canon or a spinoff but the Devs were always very clear that ESO is indeed canon to the main series, same as every other game (except for maybe Elder Scrolls Travels: Dawnstar).
