Yeah dragons definitely seems like a no go for companions. A lot of things seem wrong during dragon fights with them.
I actually have no idea. I pay no attention to my companions whatsoever. I figure they're going to be a helpful extra weapon in battle, and the might help heal me. Other than that, meh. They resurrect right away when they die, so they're more helpful than not.

Are they supposed to resurrect right away when they die? Because my Bastian doesn't resurrect until the fight is over.

That is correct. Unless you resurrect them with a soul gem, they will stay down until the combat is concluded.
