But, is there anything that can be done with an item in a collection after you deconstruct it?
I mean, can you use the image for outfits for example?

✭✭✭✭✭Once the items are in set collections, you can reconstruct it in any known trait for a certain amount of transmutation crystals. Very useful for gearing up alts or multiple characters who would otherwise need to grind their own set of the gear.
As for appearances, learning a motif page will allow you to craft that item and to use the item's appearance at an Outfit Station. Learning a Style Page will allow you to use the item's appearance as part of an outfit at an Outfit Station.1
