I run Infused chest and legs with tri-glyph and Impen. On the other 5 with Stam glyphs.
On jewels I run all 3 infused. 1x recovery and 2x WD.
DW is 1x nirnhoned and 1 sharpened
Bow is poisons. Take your pick.
Race is personal preference I suppose. I use Redguard but Nord would be a good choice as well as Orc.

Since you are new to PvP you may want to go 5 heavy, 2 medium. I would get EV jewelry and head and leg body pieces so you can switch to a 5 medium 2 heavy setup later when you get more comfortable.
You will want your chest piece heavy because it gives the most armor and I like the reinforced trait on it to boost it even more.
Infused on head and legs and then a combination of Divines and Impen on the other pieces. Since you are new, you want more Impen.
Jewelry I use all Infused 2x WD and 1 Stam Recov.
Weapons are Nirnhoned 2H Maul on the front bar with poison enchant, back bar either Nirn, Decisive, or Defending 1H and Infused shield with tri-stat glyph.
I prefer Orc.

I have an Orc he's PVE based, as for the sets which one should be used On the front bar for the melee two handed weapon?

2H Nirnhoned Maul on the front bar, SnB back bar. If you go with New Moon, you may want Potentates for your back bar weapons. Other sets you can use on both bars just fine.

Forgot to ask this when I made the thread but, since there's so many sets In this game how can people differentiate between the PVP, PVE sets based on the bonus 1-5.Are there certain stats to be looking for?

The only way you can tell a set is obviously made for PvE is if it has something like Major Slayer on it.
(3 items) Gain Minor Slayer at all times, increasing your damage done to Dungeon, Trial and Arena Monsters by 5%.
