I'm in 3 guilds on PC EU and one on PC NA and I've had very little issue selling various items. I just check the prices in TTC MM or ATT addons before I list. On EU I have even close to 100% refresh rate per day for inventory.

tbh I do even selling mats lower than ttc significantly. I just sell in zone chat now. a lot of my friends are basically just selling MS and thats it. despite having tons of mats

You just have to pay attention to what is hot and list it at a competitive price.
The high level players, especially the elite ones, use the guild stores to buy and sell between each other and most other players decon, sell to NPCs, or gift surplus items to friends and guildies, or just switch the items between their own characters.
You don't really have an economy in a game where the trading system is restricted to a certain number of players and largely dependent on third party tracking systems.
