As a farmer myself, I would benefit from that set. But it would totally be used by farming bots as well, so that's a pretty mixed bag.

I'd love to see some more 'interesting' sets added to the game. I don't care if they're mediocre, they can be relegated to overland or simple RP, but scathing magejust an example of something which is silly but if anything, fun.
It will just add more chore, especially on concoles without addons. You will need to switch sets for different activities to be efficient. You already can switch for more speed setup for farming, but you don't get directly more quantity or more quality, as it now it don't feels like a must have thing.

Honestly, this is what I would like the champion point system shift towards whenever it gets its overhaul. This game could really need more rpg flavour similar to the master gatherer perk. If the really impactful non-combat perks are high level enough, no garden variety bot could access them, and it would add depth for people who are not into the super difficult pve content while also being relevant for the top 1%.
I have one character. It will depends on bonuses, if they will be little, more for a flavor, then it will be ok, if bonuses will be big, then it will became almost must have.It will just add more chore, especially on concoles without addons. It's no "chore", if you have +10 characters, and only actively play with 4-5 of them, and use the rest for crafting or farming (or whatever). I have one "thief" that I only steal with, absolutely useless in combat (I rarely have to fight anything anyway), but good for thieving and farming materials. I never change gear, because that's the only thing I do with it.
And I know quite some people who switch combat sets inside trials and even dungeons, and I even do it myself too at times - to switch between "trash mob riot control" and "burning bosses fast" setups, depending on the occasion (when I'm expected to do a little more, because other's have a lower DPS or whatever). It's not a big deal really.

Inventory space is already an issue. All this example would do is bloat the number of sets I'd need to carry to feel I was being efficient at all the different things I do.

Imagine buying this set and farming 500 nodes and getting 8% more mats because of rng, then imagine someone else buying this set and immediately getting the double aetherial drop that's possible the way you have it set up. No.
I don’t see the need for complete sets to address this issue.
Given the benefits and bonuses of sets usually reflect their origins (eg trials sets are generally specced for players doing trials, overland sets are generally specced for general stats etc), it would make sense for farming sets to be found via overland activity and provided via mythic items rather than a conventional 5 piece set.
This way the benefits are vaguely related to the activities of farming.
Regarding OP’s original set proposal, many of those benefits can already be obtained via skillpoints or champion points. Additionally I could see a set like that being massively abused by players switching gearsets every time they located a treasure chest, then switching back immediately afterwards.
