I'll tell you a reason. Yesterday my guildmate was asking to do a random dungeon. He had a DD character lvl 18, so dungeon was supposed to be easy. I joined with my lvl 29 DD. CP 810 player joined as DD also. The first player asked me to change to tank so that we could use a dungeonfinder and have some random healer to join. So I did. I was a fake tank with a bow and 2h. A healer lvl 20 joined. We did a fast Fungal Grotto, we were barely able to follow a quick 810 CP guildmate - he was running and killing everything like Pelinal Whitestrake.
Was it a good idea for me changing my role to tank? To be frank, I don't feel good about it. I'm not a tank. I was worried about the healer, what he or she will think of me, maybe something like this: another fake tank, could be a reason for ruining the dungeon, we are lucky to have CP 810 guy here. On the other hand, what could I do? Maybe just pretend I don't know how to change role... What would you advise? Of course I will never do this in normal DLC dungeon, not speaking of vets... But what if we know it will be Fungal Grotto or other easy dungeon?

But I think you're talking about someone signing up with a fake role to get a faster queue. It has nothing to do with roleplayers, it's most likely just disrespectful (or just genuinely clueless) people.
When you know how to tank, you can tank with mostly anything for the easier base dungeons you would usually PUG. You can tank many base game vet dungeons with a full DD build, just keeping the boss in place, and on you.
The LFG tool is nice, but you need to be ready for anything, because anything can happen. Sometimes it's just a set of genuinely inexperienced DDs that can't pull enough DPS to handle some mechanics, sometimes it's fake tank or fake healers.
It can be particularly frustrating yes, but it's the way it is.

as a Roleplayer I wish tanks had more options period. and I wish they didnt do jack nothing for damage. being only double S&B or even having to use S&B to tank is anti roleplay and anti imagination.

Honestly I've been playing with a magicka sap tank that would most certainly get booted if I PUGed with it simply because it's not the norm, so we're screwed either way. Funnily enough, I clear quite a bit of vet hardmodes with it and haven't had one complaint from my PvE guild so I guess I'm lucky there. But what do we know, we're filthy RPers.

You can magicka tank effectivly. My friend has a Magsorc tank and he's a beast with it.
