Personally I would make a dark elf Dragonknight for Ebonheart Pact. That way I could tank, mag dps, and stam dps all on the same toon. I could also do PvP or PvE. I could even heal in a pinch if needed, but healing is the thing I do the least. I only choose EP because I like their color scheme the best. I have no particular affinity or aversion to any of the alliances.

That would be incredibly limiting. If ESO was stupid enough to limit the content you could engage in by limiting people to only one character, I wouldn't be playing.
Why do you think they provide as many free character slots as they do? Why is anyone seriously answering this question? Seems to me, just asking if you could choose just one favorite character would be a far better way of asking the more or less the same thing.

SniperDaria✭✭✭✭I do play one character and I would say Nightblade has been awesome because Dark Cloak has opened so many doors for me over the years. I've gotten into so many places I never would have been able to get to without help. Also you can do the Thieves Guild and Dark Brotherhood content way easier than other classes. It's also good in both PvE and PvP.
Versatility is maybe not the best, though, if that is what you want. Other classes can do all 3 roles more easily whereas NB is best at DPS, but you can be a decent healer as well (maybe even tank too if you have the skill)1 -
