Lol my characters only ride the daily reward camel when riding across the sands in Alik'r Desert. Beyond that, the camel gait, while realistic, is a bit annoying.
Each of my toons has their own favorite mount.
My Bosmer, for example, likes the indriks and the Summerset Bloodshadow horse, while my Khajiit likes any feline mount.
I haven't went and counted, but it "feels" like a lot of the camel liking folks seem to really enjoy the fact that it spits.
Edit: Not saying this is a negative, I mean I really like the feel of my senches jumping! And doing a heavy breathy roar in people faces can at times be well enjoyed.
I have many, even the radiant apex one. Never rode a single one. The animation is weird, and I have mounts that are way cooler. But if you like camels, its not for me to crap on what you like. Everyone should have their own joys and happiness.
That is what makes ESO so great, you have the opportunity to play however you wish.
I have a couple of them, but I'm not fond of riding them; the gait makes me a bit seasick. However, I'm not averse to getting more, because I really enjoy housing, and they look pretty great parked in the stables and courtyards of some of the homes.

What we really need is a camel non-combat pet! Nearly every mount in the game has a mini version but the camel does not, even the Dwemer spider has a non-combat pet version.
strictly themed mounts are very nice for me, if i have an option (or addon) which can automatically switch them in some zones. Camel in Alik'r Desert for example, that big cat in Elsweyr etc.
I want to like the camels. The problem is that their animations, particularly when walking, are so BAD.
Indeed, I've been playing TOR lately, and it's made me realize just how terrible the animations here really are... but the camel is on a whole other level.
I only used it in desert areas for RP reasons. Also their spit is quite funny. Apart from that, I usually use the other mounts available. Mostly I ride Senches, Horses and Guar. Wolves and Bears to a lesser amount.
