Every time I go to equip an item my 'E' key (PC-keyboard user) is not working to select items. Even if I left click sometimes it doesn't work to select an item either. I've tried disabling loads of different addons and I've uninstalled and reinstalled CraftStore - Decon Assistant - Dolgubons - LUI - Potion Maker - Research Assistant - WritWorthy. Even if I reloadui it doesn't fix it, and sometimes even restarting the game doesn't fix it. Also when I interact with a Crafting station (let's say Clothing) and then move to another station (like Woodworking) it will bring up the screen that shows only my Clothing stuff, not the correct view screen to show bows/staves and shields. I have to reloadui to fix this but I still can't select items in the usual way. This just started with the most recent "fix".

Has anyone else experienced something like this or have any insight as to what it could be?

Yes disabling addons does remedy the problem but I don't know which addon specifically to look at.
