How about they put gathering nodes inside dungeons instead and you can go get them while you do it on Veteran solo.
Challenging fights plus gathering nodes with no one to steal it from you while you're fighting.
SWTOR actually has this. On top of being able to salvage corpses for materials.
silver line between fun and challenge is hard to find by yourself and it's actually not fun at all if YOU do it, instead of someone else like mod makers, or in our case - devs only.
Disable CP is meh, you still can kill anything fast if you use high burst damage skills instead of dots.
Using non set gear is meh too. Using low level or mismatching gear (stam stat -> mag spells) gear will nerf you to the ground when gameplay become pretty boring and not fun rewarding (don't even think about real reward), probably because of stupid horizontal progression - same BS wherever you go (zone/location/delve/dlc/chapter).
p.s.
it seems they add 60k hp BUFF for trash overland mobs (random spawn), didn't saw humans, only affect animals. Yeeeaaah ? xd

You can always draw back all ur champion points from the cp trees.

I have seen a lot of stupid idea's within game forum's and I think this one comes down to perspective.
I played World of Warcraft a solid 10 years a go and the world remains at least mildly threatening in endgame.
I think for some a challenge and incentive to complete quests etc... Would be very welcome.
For others killing mobs whilst trying to grind money has become a chore.
I pretty much sit on the fence with this one.
I would like an incentive to complete quests and would not want to one shot every mob.
At the same time I like the speed i can kill mobs when grinding nodes etc...
I also agree with you point of feeling the power of your progression.
So would a switch to turn off CP be a 'stupid' idea? I don't think so.
Do I care if it is implemented? not really
I’m not gonna be one of those people who goes JuSt MaKe ThE sIx GrAnD aGaIn. Because even though it’s a gold sink, it’d be a huge pain in the rear end to redo your CP every time you wanted to use it. And there’s honestly a lot of gold sinks in the game. The idea of a toggle to personally disable your own CP doesn’t sound like a bad idea. It’d be a gold saver, and I personally don’t like deleting overworld bosses and whatnot in 2 seconds. I mean, that’s gonna happen in all raid gear and 810+ CP. I miss having a challenge like when I first started the game.
