Every time they take the server down for an entire day like this they should extend our sub-time the same length of the downtime and add it back on the timer. Only fair.

Please educate yourself and actually go read a definition of what "prime time" is before sending another post like this.All the time is prime time according to some people ... Whatever time they decide to do a maintenance there will be peoples that think their time is so much more valuable than other peoples and I wish people would stop crying ... I am a little annoyed that the maintenance will be longer but I don't go around bitching about it non stop.

True. But prime time refers to evening hours in a time zone. The EU server went down at 4:00 PM BST saying they would back up early afternoon (4:00pm seems late afternoon to me) but it is now early evening so where is the update?
If you are going to keep the servers down on prime time, can you at least give some kind of updates regarding how long we are going to have to wait?

Wrong. If you have a dedicated EU server there is such a thing as prime time. Yes, it's +/-1h depending on whether your life in the far east or west of the EU but there is still such a thing as teh "EU prime time".
ZOE decided to shut the servers down right when that EU prime time started. People just came home from work and wanted to play the game they pay - or are going to pay - a monthly fee for but they can't. And that's not acceptable, no matter what the TOS might say. [As a sidenote: It is questionable whether the TOS are even legal and valid in the EU.]
