I can't see, why temporary obstacle demotivates you. Usually, when something challenges you, you think how to overcome the challenge, unless you are used to submit every time you face anything remotely hard

If tou are going to play mostly solo in this game, you must be built for resource sustain, self healing and sufficient damage output. Going hybrid magicka and stamina as you are will actually make things much more difficult for you, since the more things you try to be able to do, the less capable you will be at doing them.
You would be better off choosing to focus as either a magicka based damage dealer, with stamina reserved for blocking, dodge rolling and breaking free, or a stamina based damage dealer, with magicka reserved for buffs. Your self healing skill should always be based off of your strongest attribute.
If you go stamina, run Vigor from the alliance war skill line and slot Repentance. Vigor is your heal over time, and should be kept up throughout a fight. Repentance acts on corpses around you, and has both a heal and stamina return.
If you go magicka, use Puncturing Sweep, which is a damaging skill with a built in self heal.

Now in the quest it says to get the Eidar Scroll. Upon trying to open the chest three enemies appear. Two spellcasters and a Melee. I CANNOT last more than a minute even with spamming buffs and spells and switching between weapons. Joining a group would make it easier sure but having the trouble to do so is a pain. This is disheartening to say the least and I kinda don't want to play. What did I do wrong?

The mages' daily quest "fetch a relic of the mad god" is always in a public dungeon. Usually the location of the item is in a boss area. Public dungeons were intended as a group thing, or a challenge for a solo player. Until you're leveled enough to clear a public dungeon solo, you'll probably have problems with the quest.
Consider doing the faction/story/main quests to level. Then you'll level, have skill points, find better gear/have better gear crafted for you, and have more skills and abilities.

I like the condescending. It's hard to figure out what I need to do in order to progress other than your advice of "upgrade, get better gear".
It was demotivating because I thought I was adequate enough to dispose of these enemies. It's hard to gauge how these enemies in particular overran me.

First of all throw everything they said in the trash because that's where it belongs. You got trolled, don't feed the trolls. You and your gear are upgraded to level 50, so it's fine for all quest content. You need to understand the mechanics of the fight. You may need to change some skills out for the fight. Grab some tri-potions (health, magicka, and stamina). Don't stand still, keep moving. Kite the melee and focus on one caster, then the other. You should have a least one self buff (use it right before or as soon as the fight starts), then some kind of area of effect / damage over time spell (throw that out on the one ranged you are going to focus on), and then hit the caster with everything you have left (don't forget to use an ultimate (a damage type) if you need to).

I wanted to sorta make a DPS build. So I've not spec'd in the healing. Looks like I will for survivability then.
