Well, it -would- be a game-viable way to actually have people be able to have a griffon mount, without all the can-of-worms issues actual flying mounts would bring, the very same that would make them impossible.And that brings me to another point. This ain't flyin' mounts. WoW has flying mounts. They're mounts, that fly. What you and the others are calling for is "free fast traveling", under the guise of flying mounts, which will do nothing but confuse people into thinking the game actually has real flying mounts, when it never will (confirmed by devs it's impossible).

1. I expect Zos will sell assistant skins in the crown store if they feel there is enough interest. Makes sense and threads like this might bring it about.
2. A fast travel assistant is not a flying mount. Not sure why anyone is calling it that since it could not be a more incorrect name for fast travel. In reality Zos just needs to make quick travel free for ESO+ members. It makes sense.

Assistant Skins
Like Mounts, the Banker, Merchant, and Fence Assistants should be given multiple different appearances. They would all be functionally identical, but look different. Simply break the "Assistants" menu into subcategories for Banker, Merchant, and Fence and list all of the owned collectibles under the appropriate heading. Then create some new NPC's for us to drag around Tamriel with us, and put them in the Crown Store. This is a whole new revenue stream for ZOS and a new level of RP/customization for players, so win-win.
Flying Mounts
Inspired by this thread, create a new Assistant type for "Flying Mounts" implemented as a portable wayshrine assistant. It'll function like the other assistants, you summon a flying mount and it'll follow you around. When you click on it, it allows the owner to fast travel for free. Instead of a teleport animation, after you select a location you'll jump on the back of the mount and fly off into a load screen. (Don't tell me that doesn't sound awesome!) Obviously, it would need to use the same outdoor-only restriction that regular mounts have, and would not be allowed in PvP. When placed as a furnishing, we can use them to fly out of houses for free. Again, this is a whole new revenue stream for ZOS and an awesome new tool for players. Win-win.
Additional Functionality in Houses
Assistants placed in houses should provide the full range of services their counterparts in the overworld do. Armor repairs from the Merchant, Guild Bank/Store access from the Banker, and full-price fencing and laundering from the Fence. Only the owner of a Flying Mount should be able to use it in the overworld, while visitors should be able to use them to exit houses for free. Imagine completing a group parse and then mounting up together on four different "furnishing" mounts to fly into a new dungeon with your group! That would not only be convenient for everyone, but it's extra cool for roleplayers. This change would both increase the value of the Assistants and the housing system. You'll sell more stuff! Win-win.
Automatic Despawn
It's incredibly annoying when someone forgets to put their assistant away during dungeons and trials and other content. In some cases, they actually get in the way of activating other things. The solution is implementing automatic despawn for all assistants when entering combat. So if anyone forgets, the Assistants will take care of themselves and get out of the way without the annoyance. This will also act to reduce the buildup of multiple copies of assistants in areas with a lot of players.
Those are all very modest changes that can be easily monetized and would be loved by fans. Please make it happen!

I'd just love a pack guar as a pet. It would be awesome having one with saddlebags following us around, although hopefully they'll improve the color of the originals that are in the game.
