For Stamina PvP, I'd almost always recommend Stamina Nightblade - it was the class with which I learned how to AvA, (i.e., Cyrodiil/open-world PvP), and it's quite easy to pick up. If you like the stealthy, highly-mobile, high-risk-high-reward approach, then I think that Stamina Nightblade would really suit you - it doesn't take too long to establish a foundation of ability onto which you'll quickly build, and there's nothing quite as satisfying as causing utter havoc when an enemy group realises you're out there and starts to panic... ...except for maybe killing that Nightblade... ^^
I'd also advise trying out StaminaDK, because you can quite easily assemble a build that'll do very nicely, and I also find it to be a very potent, very fun class. When I first tried it out, I rolled a 2H/Bow combo, using Sword-Singer's and Hunding's Rage in the <Level 50 Campaign, and it worked like a charm - it still does; I'm having so much fun with the build, I've purposefully not levelled him so that I can continue to play with this style. It hits like a truck, is sufficiently tanky, and is again highly mobile - it's a superbly fun class to play in both AvA and Battlegrounds, and its ability to withstand punishment is also quite impressive. Plus, I like it that I get to style my Orc StamDK as a genuine Knight, so I find his armour very satisfying to look at.
Speaking of which, character aesthetic might also be a good thing to consider - StamNB very much uses dark, blood magic, so the abilities are red/black; StamDK can vary, but the sweeping DK colour is orange, with poisons having a green tinge. Furthermore, because of the nature of most StamNB builds, for immersion purposes, you'll want to style characters with Medium Armour, whereas StamDK can work with both. I won't repeat how others have already explained the classes, but I'd consider how you want your characters to look, and what look/feel you're really attracted to in this game. Equally, at the end of the day, if you don't like a class, there's nothing stopping you putting it on the shelf to be tried out again at a later date, and rolling a new character. 8 slots should be plenty for you to find something you really like!

EDIT: Aaaand, I forgot to talk about where to get builds from, *Slaps self for incompetence*! Personally, I really like Alcast and Dottz Gaming; Deltia does some really good stuff, (although I'm not sure if he still plays regularly), and Blob ESO also makes some interesting, effective builds. Alcast and Dottz Gaming are quite accessible, as well - some of their builds to require end-level gear, but most of them are quite easy to make, and are very potent. Equally, the odd YouTube search can lead to something great!

So here we are 1 week later and im lvl 22 and honestly I don't like the class, solo mob grinding it is fun with the bear but Dung and especially pvp I just hate it. I have tried 2h/bow and 2h/1h//shield and it's just not for me. Can't put my finger on it yet, not sure if its the 2bars I have to swap to or what, but he's not fun at all.
This leads me to ask advice for suggestions. I have a few questions that i need help with please.
- With my limited playtime, I'm not sure how much time i need to invest into a character before I know I like them or not, whats a good lvl?

I don't know what it's like on XBOX, but on PC NA the sub-50 Cyrodiil campaign has a loyal following of players that will start new characters over when they reach level 50 so they can keep playing there.
So if you want to try new classes (remember you can have 8 characters out of the box), you can start one of each class and take them to Cyrodiil at level 10 and see if you can group with some of the vets there to teach you the ropes.

You are brand spankin new, so hear this:
Everything you do with your character after creation can be reversed and modified. EVERYTHING.
So, the most important long term thing you have to start with is race and class.
I am going to suggest to you that you make a sorcerer redguard. Redguard have good stamina affinity that works well with the weapon skill lines, and as a spec you’ll have some shields and mobility.
It’s not min max. It’s a bit in between that doesn’t leave gaping vulnerabilities. And then, don’t grind - just play the game.
Treat the game like a 5 course meal. You don’t rush through the soup and salad and main courses just to get to the pastry dessert - you take your time and enjoy each dish. So do the same thing with eso - do the quest lines. There are at least 5 storylines happening in every single zone. The zone plot, the alliance plot, the main plot, the fighter guild plot, the mage guild plot. Then there are the small stories happening in just a town - one of my favorites was the doctor that was slowly feeding the whole town to his vampire son one person at a time.
You’ve got lots of time before having to worry about a build. And if you play the game then by that time you’ll already know what sort of things work for you and what doesn’t.

I think nightblade (magic and stam) is the most well rounded class in the game.
For melee, you could also consider Magic DK or Magic Templar.
Magic DK is about pressure, CCs, and they can take a beating. They usually get kills by wearing down their opponents, and bursting with ultimates. Magplars arent as powerful as they once were, but if you have any thought to healing, its a solid choice.
Perhaps the bigger issue is your level. A level 22 character (of any class) is only going to have access to a handful of skills, and often the good ones dont come until later. Your character will feel very different once it is properly leveled. Regardless of what you choose, I would go all in on something until you get a few hundred CP under your belt before you roll a bunch of alts.
For the love of god, do not start spending AP on gear boxes at your level. You shouldnt spend anything on gear until you are at level 50, AND have 160 champion points. That is the gear cap. Once you are there, then you can comfortably invest in gear you know will last (at least until the next patch).

Pretty much all magic characters use staffs in PVE on both bars. In PVP, its pretty common to front bar a destro staff and back bar either a resto staff or sword and shield. 2H is really only used by stamina characters and only in PVP. It does have some uses in PVE if trying to solo stuff, but for pure damage, its all DW/Bow.

I was hoping for something that isn't a glass canon and good mobility. Open to try anything.
- Where is the best place to look up builds for summerset? when I google I see certain people pop up alot that are "popular" but the comments on them are either laughing or copy of other builds or the builds assume you are a veteran.
- Lastly, I was in cyrodiil last night and at the vender. there was a girl vendor I think sell gear boxes for 5k points. but there were like 20options. where can I go to find out what would be in them?
- I'm in 2 guilds, how do I find where if at all do the has a vendor to sell things?

Go with what you want and learn from your mistakes. Honestly this is the best way of doing it, I was a Redguard Magicka DK at the start of the game haha... but this was back when it was really possible! I didn't know I had nerfed myself doing so, but hell I still have it and play it!
