What does everyone save their crown gems for?

You know how it is, you open your crates and get an entire warehouse supply of potions and poisons, and then convert all of them for the vast some of ~5 crown gems. Or you get crown souls gems, and convert them too. Or your 100th nix-hound pet.... and you slowly build up your crown gems.
Do you purchase something as soon as you can? Or save for the legendaries, or even the apexes?
I'm sitting on 75 at the moment, and tempted to save for an apex mount (or even just that Pellitine horse, which looks awesome) - but considering I only get crates from my subs and free giveaways, it's a fairly slow process...

✭I usually end up buying a round of crates and filling out mid-tier (16- and 40-gem) things that I wanted. Occasionally a hundred-gem item. I have all the motifs, and most of the time the furnishings or mount recolors don't interest me (I do like the Peryite statue this time around, though).
I'll buy fluffy guar with gems if I don't get it in the round of crates I plan on getting. Best guar.1 -

As much as I wish they would let us buy Radiant Apex mounts with gems, I highly doubt they ever will.
As long as there are people willing to buy endless amounts of crates in order to get one, it makes no sense from a money standpoint for them to change it.

Orticia✭✭✭✭I been lucky and got the sweet roll a while back in one of my rare real money bought crates (bought some for the 2 crow mementos, the flock and the one that flies on your arm). So I have a nice little gem-stock (depleting fast) I am trying to get the most out off. Reserving 100 in the off chance they ever release a crow pet in a crate, because knowing my normal luck that would be 100 gems then.
Stuff I buy with gems has to check off 3 points: I have to really like it AND would actually use it semi-regularly AND I think is worth the gem price.
Which leaves out quite a few things, even stuff I really like, often due to being priced to many gems for what I want to pay for it or fun/nice but won't see use more then once in a blue moon. Those items all come from the free crates, or not at all.
So I generally only get things from the 16 gem category, extremely rarely from the 40 one (only 2 so far: crow flock memento and red costume dress from flame crate. Never 100 gem or higher stuff. Just to much gems to collect and simply prefer to wait for new cheaper stuff so I can get more fun things.
