Is there any way to overcome this restriction and join? I fail to understand why some countries are completely excluded, and I really wouldn't want my submission to be void.

Your national laws, for whatever reason, make it unnecessarily onerous, to include you in an international contest.
For example, I know Aussies get excluded because their national laws require the drawing to be held in their country, to be legal.

Wow, really? I mean I know the countries that are excluded are excluded for cause..as in their country makes it nearly impossible or impossible for them to be included. It's nothing personal on ZOS's part.

I'm from Poland and I also can't participate.

All participants must be 18 years of age or older at the time of entry, must possess a valid form of identification and be a legal resident of (i) one of the 50 United States (or the District of Columbia) excluding the territories, military installations and commonwealths, (ii) Canada, (iii) the United Kingdom, France, Germany, Austria, Poland, Spain, Belgium, Sweden, Switzerland, Norway, Netherlands, Luxembourg, Russia, (iv) Australia, New Zealand, or (v) Argentina, Mexico, Peru.
The exclusion refers only to certain US territories, which is what point (i) deals with - for example overseas military bases or the Commonwealth of Puerto Rico. All other countries listed in points (ii) to (v) are included.

It wouldn't even make any sense to say "the United States, excluding France, Poland etc." We're not part of the United States.

I really don't understand why Spain, France, Germany and so on are allowed but Italy it's not. I was disappointed too.

Maybe, maybe not. This time there are no physical rewards, so maybe the rules are different than in other contests and that's why more countries are included. This is incorrect. Australia is listed as a country which is eligible for this particular contest.
I love the way everyone knows all about these "laws" that seemingly do not exist, yet nobody can tell you what the law actually is, and unfortunately the one person who has tried to has been debunked by the fact that Australia is included.
