I dunno, my Khajiiti Warden just had Dunmer talking trash to her face about "cat" mercenaries and "beast-races" and they didn't even drop a casual "no offense" in there even while thanking her for being heroic against the mercs. She had some rrrrrrrrsnarl action going on with her mouth there.
Sharp contrast to one of my most immersive moments, very early in the game as my Redguard DK (made on EP b/c all my friends wanted EP) trotted through a Nord city and a random Nord bystander said "You don't often see a Redguard around here."
About the cavalier hats -- as others have noted in this thread they are -not- cowboy hats at all. They have one side folded up and a flat top. They are 17th century musketeer hats. Perhaps still a little outside the overall Tamriel aesthetic, but not nearly as anachronistic as cowboy hats.
Most of the examples here are pretty typical of any MMO (or other CRPG), especially in relation to conflicting factions which really only the original EQ got right.
I imagine that if I used zone chat or voice chat I would find it hard to maintain any semblance of immersion, but without them the main issues for me are probably player names (no worse here than anywhere else) and dueling around wayshrines etc. On the whole, however, I find the sense of immersion pretty good and no different to the offline TES titles, where things like the inventory management (including handing loads of weapons, pieces of armour and sundry other gear to the young lady in Skyrim who is sworn to carry my burden) are as nonsensical as anything in ESO. I've played every TES title and people delude themselves with a lot of their put-downs of ESO in comparison to those games, every single game is just that - a game - rather than to be taken as seriously as real life itself.

I think i jabbed cadwell for over an hour for giving that comment!
Recently a Crown Store item did it for me, I'm not the "immersion" type of player but there was one hat that was for sale that resulted in line dancer/cowgirls almost everywhere i went.. I just thought it was trashy actually and spoiled the theme of the game a little more than my immersion.
That's the winter hats. Don't hate me, but I did buy one!

Immersion in MMOs has always been difficult to maintain for a variety of reasons. The sheer amount of people running around in Hot Pants in Star Wars Galaxies taught me that.
I applaud those who make the effort to suspend their disbelief in an effort to feel immersed, but at some point you have to accept you're in an MMO and go with it.

Lot of immersion breaking stuff comes with the genre, much of which is simply other people, I can accept that.
Some things do make me sigh sometimes, like all the disco mounts, npcs not reacting to player vampire/werewolf. Long lost ancient dungeons filled with undead, and hundreds of lit candles.
