Personally, I don't like repeating too many of the same combos or go for Cookie Cutter builds, I go with as creative as I can and try to be unique with each character with some variety. As a mostly casual player I primarily play to have fun not be competitive. It does create some weird combinations such as using One-Hand + Shield in the DPS role, one as Magicka and another with Stamina. I don't like Stamina Tanks, I don't know why, they just don't feel right. I have at least 1 of each race, and try to limit any weapon combos like Dual-Wield, Two-Handed, and Bow to at most 3 across the board.
Templar:
Imperial - Magicka. One-Hand + Shield, Tank / Dual-Wield Swords, DPS/Healing
Breton - Magicka. One-Hand + Shield, DPS / Resto Staff, Healer.
Bosmer - Stamina. Two-Handed Mace / Bow. DPS.
Sorcerer:
Altmer - Magicka. Lightning Staff, DPS / Resto Staff, Healer.
Khajiit - Stamina. Two-Handed Axe / Bow. DPS
Orc - Magicka. One-Hand + Shield, Tank / Lightning Staff, DPS
Dragon Knight:
Dunmer - Magicka. Fire Staff, DPS / Resto Staff, Healing
Redguard - Stamina. One-Hand + Shield, DPS / Dual-Wield Maces, DPS
Imperial - Magicka. One-Hand + Shield, Tank / Fire Staff, DPS
Nightblade:
Argonian - Magicka. One-Hand + Shield, Tank / Resto Staff, DPS/Healing
Breton - Magicka. Resto Staff, DPS / Resto Staff, Healing
Warden:
Khajiit - Stamina. Dual-Wield Daggers / Two-Handed Sword, DPS
Altmer - Magicka. Ice Staff, DPS / Resto Staff, Healing
Nord - Magicka. One-Hand + Shield, Tank / Ice Staff DPS/Tank
Only thing missing atm is a Stamina Nightblade who will be Bosmer Dual-Wield Axes and Bow.
