Here's a fantastic idea for dueling: use the dueling option available anywhere except Cyro.
To the people saying "go duel outside Cyrodiil": keep in mind that these duels always involve CPs.
For people who PvE a lot (and thus have to keep a PvE allocation of CPs), dueling in a CP environment isn't always an option.

Well... large scale combat is not the same as zerging. I'm all for a massive keep siege/defense so long as both teams are on even footing. But too often these days it's one or another faction essentially pvdooring.

It kind of is, really.. a zerg is just a lot of people in the same place... can't do large-scale battle without one! Well, 2 for that matter!

That´s usually explainable in the general approach to the game.
As mainly a solo player i don´t take issue in zerging nor do i claim to never be part of that. I think zerging is good for the game and can be fun.
Eso has however another form of zerging than other games i´ve played (where zergs would generally aim to take objectives or fight other large armies).
In eso you find people that specifically aim to fight outnumbered opponents (maybe because soloing was so common previous patches - now it isn´t anymore due to game changes and the type of player i mentioned).
I think people are right to be smug and feel superior to those kind of people. Players that not only put their own fun at a higher importance than that of their ingame peers (which would be/is somewhat understandable) - those people find it fun to make the game less fun for others.
Making the game purposefully less fun for other players is something i´ve only ever encountered in eso (on a scale to be relevant as in not only a handful of trolls) - after playing mmos for more than 16 years.
Edit: Take as an example aidee @Biro123 here on the forums. He´s playing solo but most of the time i see him zergsurfing or defending/taking objectives.
I´ve basically never encountered him playing my EP sorc from rank 0 to 39 unless i poked the hornets nest. I have absolutely no issue with his approach to killing/adding what he encounters because he´s not one of those players that are looking to kill someone already engaged in fights open field or chases you into the sunset.
If i get my ass handed to me near a keep it´s my fault.
If i get my ass handed to me because literally 15 people chase me on horseback from nickel (being my own keep) to brindle farm and then teabag me and camp my corpse - well that´s the kind of zerging i have issues with.
This is the most baffling thing. If you see a member of your faction 1v1 against a member of another faction, why do you run in with your group of ten and zerg them down?
1) It proves nothing. It doesn't prove the person you killed got "rekt" or sucks, it doesn't prove you and the 5+ people with you are good.
2) Those two people aren't going to change the course of the battle so just leave them alone, why bother? You're not getting any exp or ap really.
3) Maybe they wanted to test their skill 1v1 and no they don't want to leave Cyro, 1v1 battles should be a part of war. And honestly, if it looks like a good fight chances are the person on your team doesn't want your "help," because they prob would have been fine without you. Honestly they probably shook their heads and sighed at the crumbling state of good pvp and then went and apologized to their opponent for you.
4) Dying in cyro means nothing. If youre wearing mostly impen your gear doesnt break down, you dont lose money or ap or anything. The only consequence is likely a short ride back to where you were.
5) It isn't at all cool to soul assault gank someone in the middle of a 1v1.
Times when it MIGHT be ok to intervene is if your team member is getting sniped by some *** in the trees or theyre outnumbered. Or, one person is taking out an FC or capturing a critical resource, or youre a smaller group and need every person you can get to take a keep etc. Still I even let an outnumbered team member fight it out if it looks like they can handle it.
Look I get it, the heat of battle and getting zerged down is part of Cyro open world pvp. But, just pause for one second before you go and hit your ulti button when you see a small scale or 1v1 fight happening. Assess the situation for a moment. A lot of players out there really appreciate the change in pace of a good 1v1, 1v2 or 2v2-3 or whatever from the constant zerging without being restricted to BGs. 1v1 and small scale fights are different in open world pvp than they are in BGs or duels outside of Cyro and I'm just saying, try and keep things healthy and fun for everyone. Not everything has to be zerged down everywhere all the time.

Why do people insist on dueling right next to a keep or places where there has been recent combat? If you want to 1:1, do it in the great expanses of uninhabited Cyrodiil, outside of the path of war. If you fight where others can see, expect them to join in.

people go solo to test their skill. if they find some easy solo prey to 1v1, they shouldn't complain. however, sometimes they find worthy solo opponents and by chance, a nice duel evolves. it can be very frustrating if this is ended midway be adders.
so to answer your questions: they don't "insist" on doing so, it rather happens by chance and feels very good compared to the usual zergfest. still, of course they cannot really complain about adders in that case, but I think it is VERY natural to be annoyed by them because the take away what the lucky coincidence just gave you
