Usually it's suggested to be cp160 and 15k dps for nTrials and cp300 25kdps for vTrials. Can be a lot lower or a lot higher, depending on a group. These values guarantee smooth experience (as long as players follow mechanics). Normal trials can be easily completed even with as low group dps as 80k (10k per DD in typical group) - as long as players know mechanics and don't die too much.

Can you please explain the dps amounts? what does 15k damage per second mean?
And which champion point constellations should I focus on as a stam Dk DPS?

A great beginner set up would be 5 Hunding's Rage Or 5 Night Mother's Gaze. If you don't have any monster sets you can just run the rest of your armor and weapons as a 3/4 piece of which ever you didn't choose of Hunding's and NMG. 3 piece Agility jewelry, you may want to get one healthy, two robust to get your health up since you're low CP and probably only enchant 2 with weapon damage so you can have a little more regen, again because of low CP. As you get more CPs you'll get more health and better sustain at which point you can go with 3 robust all weapon damage glyphs. Sharpened weapons (daggers ideally, with bow on back bar) and Divines armor. Thief mundus stone.
Personally I wouldn't recommend golding out your armor and with the next update that's only a few weeks away that will change weapon traits you might not even want to gold out your weapons. There is quite a difference between purple and gold weapons in terms of damage though, so it's up to you.

You can hide the helmet, option is in gameplay settings. Also, shoulders can be sort of hidden too.. if you were a costume it will cover all that ugly armor up.
