Heck, in 90 percent of overland PvE you can use one skill (sweeps) on a templar and be fine.

Templar is probably easier while levelling up simply due to using Puncturing Sweep which is a skill that does AoE damage and heals you at the same time, but if you think you can handle more than just 1-button spamming (like 2-3 button spamming) while levelling, then a Sorcerer will serve you better at end-game.
Sorcerers are well known to be the best soloers of difficult content and most would say have the easiest time of things like vMSA (the current hardest solo-centri content). They also have the benefit of having higher DPS than Templar in most all situations.
Honestly, you will have 50 levels to get used to skills and multi-button pressing. This game only has 2 swappable bars with 5 skills per bar (Sorcerer actual gets a 3rd bar if they use the Overload Ultimate) so it's not that complicated no matter how you cut it.

but what about end game when im done leveling and will go pvping,
which is less demanding here?

When you go Pvping you will run into the following situation with a Templar: In order to use your class defining skills (heals), you need to take significant damage. Because of this you will find yourself forced into a build that also focuses on blocking, otherwise once you are at low health (in order to use your best defense-heals) you will not be able withstand any pressure and will get blown up.
People wonder why so many Templars are Sword and Board in PvP. This is why. Without blocking healing is just too dangerous a game to play.
For sorcerers however you will primarily use damage shields, which are essentially if you think about it, heals that you can apply preemptively. So you don't need to go low health for them to be effective, thus you will find yourself in fewer situations where your health is low.
Combined with Bolt Escape, shields make a much better way of defending yourself without the need for a blocking type build, and allow you to go balls-to-the-wall offense mode, since for Sorcerers damage and defense scale off the same resource (Magicka).
The way the game scales you to the content now, when you hit level 50 and are earning your first champion points, your character will feel very weak. Gear becomes vital, and it's hard to get gear until you hit the gear-level cap of 160 champion points.
For that reason alone, I'd say go with a sorc. Even a temporarily gimped sorc will do fine through that patch. Templars are going to have a much less pleasant time.

Any characters you make after the first won't have to go through that Valley of Kittenhood, because when they hit level 50 they will be at the same CP level as your highest-level character.
Sorc has more timers to pay attention to, but the high damage makes up for it imo. And if you don't mind walking around with summoned pets, you'll have an on-demand heal for any sticky moments and a friend to pull enemies away from you while you hammer them.
They're both good as relatively simple characters...their playstyle is somewhat simple and they both have core skills that function well all the way to vet. A sorc is electric doom from range...massive dps and good wards. A Templar is endless sustain, less dps, but a good blend of attack styles.
For a first character, I like Templars. Their core jab attack heals you, which is massively helpful while you learn the mechanics. Their finisher (radiant destruction) is incredibly powerful in boss fights. Once you've whittled them down to under 50% health it's a ranged attack that will kill them off quickly. This fits with your desire to keep it simple - Templars can get by with three or four coremattacks they use forever. (But so can sorcs).
For me personally, a magplar and macsorc were my 2nd and 3rd characters and I've played them both for 2+ years. For a first character, you might spend some time questing and running the full variety of content. I found my Templar way more fun for this. Partially because he could adapt to a few different playstyles and has a wider variety of attacks. Don't get me wrong, I love the raw power of my sorc in pvp and end game pve...but for a lot of the running around a first character does I liked my temp,at way better.
But that's subjective. Some people live to sorc. Suggestion - create one of each, and play them for 4-6 hours to get a feel for the class. By then you'll probably develop apreference then pick one to be your main and focus on them to vet. Down the road, if you stick with the game, you'll likely want the other for something...at the least as a crafter or mule.

... what sorcs do if they get low on magicka, ?
Sorc's are the strongest class on here.
Best passives
Most amount of damage
Best ward
3rd ability bar
Best mobility
Best heals
Besr range attack
Zero weaknesses
It's REALLY hard to screw up a Sorc. I've tried. Even a bad sorc build is viable.
