As a point of reference, I just started playing 2 weeks ago. PC.
I put a 2nd point in 'Tailoring' because I knew I would want it 'some day', but this morning I'm getting a Clothing Writ to now craft that next level, which, I'm not any where near ready to go to, nor have I collected any of that second tier material.
Is there a way to spend gold (or real money) to undo that one point I spent in Tailoring?
As well, upon putting that second point into Tailoring you should have noticed your resource nodes changed. You should be finding 50% of nodes are for whatever material your character level would need, and the other 50% should be the level material that now matches that second tier.
I don't believe there's any way to check how many skill point you have unless you're on PC.. then there's an addon for that.

Oh that's interesting. So the Jute nodes will now give the next level material 50% of the time? Would that mean that killing the wolves around will give me the next level of hide 50% of the time? The Writ I got today was for leather.

Yes! So if you're level 14 or below, you'll see jute (character level) and flax (tier 2)
If you got a writ for leather, that means you actually put 2 skill points in, plus the base game gave you one. You are now tier 3 for tailoring.
So you'll find jute/rawhide (character level, if you're level 14 or below) and cotton/leather (tier 3 materials). SHOULD be about 50/50 on what you see, but you may see stretches wehere you mostly see jute, and sometimes mostly cotton.
So yes, killing wolves should give you about 50% of your character level material, and 50% of your crafting tier material (leather)
