Sure, some tips in newbie-speak.

- magplars are support and heal and dps, not really tanky.

- stamina templars make good tanks, and okay dps. For a first toon, I think a stamplar is waaaaaay easier to level than a DK, so good choice.

- you won't be a healer, per se. But you will have an ability called repentance, which is a medium heal and major stam regen support ability. You can also use an ability called shards to give people back stamina and magic. A stamplar is a great mix of melee rough and tumble fighter and supportive abilities.

- dark elves can work well. Nords are more tanky. Khajit and redguard a little more Dps. For a first toon, don't obsess over racial passives except to (generally) match a magic-geared race to magic build or stam race to stam build.

- even if you'll ultimately be a tank, don't play the quests or level as a tank. You're right...snore. A stamplar will need to know both medium and heavy armor. The more heavy pieces...Tanky. The more medium...more damage. I advise spending in passives in both, and then wearing 5 medium and 2 heavy for regular play. If something is super hard, go to 5 heavy 2 medium.

- ESO is very forgiving with builds. There are plenty of skill points to invest in dps and tank abilities...or all of the abilities, lol. When you get to vet, you'll have a character that can tank or tanky dps by switching out gear and abilities. Just enjoy the game, level lots of skills, and don't worry about the distinction until you hit vet. By that time you'll know what you want to be way better.

Things you want to level and how:

- all three of your class skills. These level by having an ability from that line on your bar when you earn xp. Always try to keep one of each of the class skills on your bars. It limits you a bit as you level, but you want your class skills to hit 50 around the time you do.

- both the heavy and medium armor lines. You'll wear a blend, so you'll spend in most of the passives in both. Shuffle, the active ability from medium armor is also a powerful tool for you.

- I like to level all of the stamina weapons on a stam character: dual, two hand, one hand and shield, and bow. These level by both having the weapon equipped, and also by how many of their abilities you have slotted. The reason to level them all on your way to vet is that there's enough xp doing that to get all four really close. Then if you decide..."hey, I want to try sword and board on this" (good for a tank) you don't have to grind them for hours.

- tip: note that I said weapon lines and skills level by having them on your bar. They don't have to be usable. So if you run a dual wield and your bow is behind, maybe waste a button with a bow ability. It won't attack, but it will earn xp for the ability and bow line.

- fighters guild. Pretty important to level for a stamplar. You want the ultimate. This levels by killing undead and daedra and closing dolmens. Close dolmens frequently, and make a point of closing every dolmen once. Just closing each once will get fighters up into the 8's.

- I like to level legerdemain to 16 to spend in the passive that reduced sneak cost. This is helpful in pvp. You don't have to grind it...just every once in a while run a thieving run and fence 50-100 items. This'll also help you earn gold.

- assault/support level by earning AP in pvp. You really want vigor, the best heal for a stamplar. That requires about 85,000 AP total...which isn't horrible, but it takes a while. Go in occasionally and play pvp and work toward this over time.

- craft skills. Just decon junk you pick up. Level these, in case you ever want to be a crafter. If you think you might craft, start researching traits. Their fast at first, but eventually slow to 30 days per trait.
