I do not get why armor needs to provide damage bonuses defensive's are good to, also they say when you get hit you gain stamina and magicka what is wrong with that?

Heavy armor does give damage bonuses through the wrath passive and yeah Magicka spells scale off spell damage, Max Magicka and spell crit but there are ways around this. So let's talk.
Hybrids really are not the best way to go because they limit you, not really in attributes but in CP distribution. Splitting your CP between Physical and Magic damage will hurt you at endgame compared to pure stamina or magic characters. Hybrids are not viable in endgame PvE (some Vet Dungeons and Trials) because they lack the DPS compared to the pure specs. Hybrids can do decently in PVP with the right gear. The bottom line is be is play as you want but don't expect best results. Now given what you said I will make suggestions, it won't help you all that much but it's something you can work with.
Pelinal's Aptitude is a set that makes your max weapon and spell damage the highest of the two values. Best set in my opinion for hybrids. This allows you to really focus on one damage type, in this case we will say physical. So let's say you just stack a bunch of weapon damage to about 3.5k weapon damage. Even if you have nothing into spell damage Pelinal's will increase you spell damage to match the weapon damage, in this case 3.5k spell damage. This lets you use your 2H effectively and still throw out some cool magic skills like flame lash and burning embers. Then look into other sets such as Armor of the Trainee, Clever Alchemist and so on. Find what works for your play style and if you need help all you need to do is ask!

you will be extremely gimped. In normal group settings there is no place for a hybrid dps build. Simply put there is no reason to be a tanky dps. Ideally the tank should be holding agro on the boss and strong trash mobs and you should have enough hp to survive any single non mechanics based hit. The healer in turn should be able to keep you alive from anything except a oneshot. However for tanks it is viable to be hybrid in all but vet trials where tanks are expected to run ultimate building builds in order to keep aggressive war horn up.
