If we stopped giving them money, how would they employ the developers and sysadmins to fix the game? Your logic is flawed.
The game has run very smoothly for me since PC launch, albeit I have no interest in PvP or competitive PvE. I have a subscription on one of my two accounts and see no reason to cancel it.
By and large the only reason people talk of cancelling their subscription is because they want a free ride. If they don't think the game is worth playing then they'll talk of quitting, which is altogether different.

He was recently killed by three mudcrabs, while he was collecting resources on a beach. His goal in life now is to make ZOS bankrupt.
I only subscribed to dye my costumes because I'm a cheap ***. Buying crowns in bulk on sales and using an empty guild's bank for storing mats for the win.

Not necessarily. If we all carry on paying like if everything was fine, they have no incentive to fix stuff. Logic is not flawed.
That said, doing something just for the purpose of having another person or entity do another thing is complicated, twisted and risky.
I'd simply say : if you think the game's worth it, pay, if not, don't.
