I can see the benefits of doing both at the same time, from my limited experience of running web servers for my business, most of the time involved is in waiting for tasks to run and seeing if they produce any errors. If you are waiting on one server then may as well wait on the second. Why one would finish sooner than the other, who knows. Maybe the database for the US server is larger and takes longer to reindex all the tables when completed?

Nope, my biz is a little smaller than Magento, we use it to run our online store. Although, if Ebay want to come buy us out too I wouldn't say no
