I will stay the way I was born in all cases which means I will be Altmer and Bosmer and Breton lady people and a Dunmer grandfather (he is very stern and white haired). I actually wouldn't mind a class change for my single NB because I just never really got the hang of playing her but, she can stay my crafter.
I'm keeping my races all the same, none will change. I like my Argnonian ganker even if Bosmer or Khajiit would be objectively better. I like my Khajiit Sorcerer even though an Altmer would be objectively better.
I have a few min/maxed characters but often the races I like most are not the best ones.
Will probably stay the same... Khajiit, Altmer, Redguard, Orc, Dunmer, Argonian, Khajiit, Argonian... I don't think any mine are considered "best in class". Could I do more DPS with different choices, yes. Is it necessary? No.

I had planned to change my MagDK crafter from Dark Elf to High Elf, but since I never actually play him, I'm not going to bother... although I do plan on a name change.
I get a feeling I'll be making more use of the name change option than race... typically I plan my race very carefully anyway.

I have an Altmer, an Orc, a Dunmer, a Bosmer, a Khajiit, an Argonian, an Imperial, a Breton and a Nord. I'll make a Redguard as soon as I think of a new character. None of them are changing races, ever.
Just so that everyone knows, my Altmer still can't have black hair. About a dozen of Altmer NPCs in the game have black hair. Just saying.
Meet my characters:

Zadarri, Khajiit Fist of Thalmor: The thing was done, as commanded. Durza gra-Maghul, Orc blacksmith: The thing was done perfectly, in the most efficient way. Tegwen, Bosmer troublemaker: You can't prove I didn't do the thing. Sings-Many-Songs, Argonian fisher: Sure, I'll do the thing... Eventually. Maybe. Aerindel, Altmer stormcaller: After extensive research, I've come to the conclusion that doing the thing would be a waste of resources. Liliel, Dunmer pyromancer: Aerindel said I shouldn't do the thing. Something about "resources". Gyda Snowcaller, Nord cryomancer: I will find a way to do it that won't waste resources and make Aerindel proud of me. Beatrice Leoriane, Breton vampire: I persuaded someone else into doing the thing. You are welcome, dear. Sahima, Redguard performer: Doing the thing sounds awfully unpleasant and really not my problem. Ellaria Valerius, Imperial priestess: I'll pray to the Eight for the thing to be done, if it is Their will.
Should have put it a "I would never change race on my character" option.
Even if ZOS has decided your decisions don't matter, mine have to matter. If they do not, then I am playing what I consider to be a "f****ng terrible game."
I'll go full ostrich-mode--at least until they pander to the action-gamers so much that I can no longer pretend the game fits my definition of "good."

My main is an Imperial Templar, but that was back when I thought I would care about min/maxing or that it would make this game changing impact. But I don't, and it doesn't. He will be going Argonian, maybe Dark Elf.
I won't be changing the race unless the need arises, What I will do is most likely change my character's Fur or patterns and colors or alter there shape if I need to.
Let's just hope they don't put a rule that npcs cannot alter your features because your a vampire like in Skyrim when with the Thieves Guild, Had to use a mod to get around that when they put that limit there. That last thing I want is spending 15 dollors to re-infect myself with Vampirism just to cure it to change my looks that be stupid.

I'll be the race I rolled each of my characters...even with changes they're still good at what they're good at. When I want to try a new race/build combo I just roll a new character. With Vet levels gone I could make an army of level 50s before race change even makes it in game.
Altmer stays swaggy but dyes dat red hair, breton stays french, orc stays orc with a MASSIVE beard, redguard stays black but grows a MASSIVE beard => James Harden, lizard stays drunk and smokes some pots (get it ? get it ?), but somehow a midget woodelf became furry and grew a F*CKING TAIL..! Yeah I was having fun there...

My main has been a khajiit since I first loaded up Morrowind and noticed there were options more unusual than elves.
I also have a Breton, an argonian and an Imperial and I'm not going to change any of their races. I'm planning to make 2-3 elves too but haven't decided on the details yet.

I've played every class (mag & stam) and this is the conclusion I've come to:
- If you are Stamina and use Heavy Armor, go Imperial. The newly buffed Constitution passive gives enough resources to compensate for Stamina Regen (for a competent player, of course) - so bulk up with Tough and Red Diamond! You'll be that much harder to kill with Wrath boosting your damage and Heavy Attacks giving 50% more resources back.
- If you are Stamina and use Medium Armor, go Redguard. With Medium Armor, you're already aiming for a Stam Glass Cannon burst build You should just max your damage and sustain at that point, hence Redguard.
- If you are Magicka in any way, go Altmer. Seriously, the difference between Dunmer and Altmer is negligible and Altmer has better sustain - if you lack resources, you're dead anyway and 3% more fire damage on a lesser 9% Magicka race or a paltry 6% Stamina on a small Stamina pool isn't going to save you. A good player sustains themselves as much as possible before factoring in others' abilities in a group. You'll be that much more resilient in group content, which any healer/tank will be thankful for. Therefore, Altmer is the clear choice.
Personally, after having my entire magicka class ravaged by the DB DLC, my Sorc is now Stamina HA and will require Imperial to be fully effective. Being an Altmer right now hurts a lot. August can't come soon enough.
