Personally, once I've exhausted the content by finding the items I want, I'm not really sure why I would bother logging in any more... I mean, what am I aiming for at that point?

That is a question for you to answer, but for many, gear, is not the end goal, it's the pesky work to get to the fun part. For some it is pvp, others want to try their hand at trials, go for the best dps numbers in dungeons, etc. But an endless grind kills the game for people. The varying sets and traits are wonderful for creativity, but nothing kills a players desire to play like spending significant amounts of time building a toon, getting the gear only to find out it doesn't work.

Yeah, I get it. I guess I just don't put as much emphasis on the end-game as other people.

When you just say fix RNG, it can mean a lot, and I've not seen anyone specifically ask for the table to be changed, I only see, hey ZOS, why does it take so long to get X item.
See the difference, ask a question they can answer rather than a 1 in 658 chance based on the loot table with values applied of X to items 100-250 and values of Y applied to items 500- 658
Why do I need to be Specific? Surely it common sense here. Either get rid of the non sets and vr 15 crap, or do a completely new system. They shouldn't be too hellbent on forcing rng down our throat.

Agree, then people would complain about there is nothing to work for or progression. People would get bored very very quickly and quit very fast. Yes RNG can suck but players play longer if they have gear to grind out. But i do agree the RNG system does need improvements.
