A sun is not made of fire, fire is combustion via rapid oxiadition (i.e. oxygen). It's mostly plasma from a nuclear fusion of superheated hydrogen, with it's omitted light coming from ultraviolet radiation.

In TES lore, sunlight is pure magic. If anything it's weird that the sole templar skill Sun Fire/Vampire's Bane/Reflective Light deals fire damage, and not just because the schism between light (Anu; creation; magic; mer) and fire (Padomay; destruction; change; men) is pretty thematically important in the lore.
