I always carry those Counterfeit Pardons on me when I'm doing those.
Make yourself some Invis pots, that can help, too.
I also practiced at getting away from the guards after reading some advice on here and they rarely manage to kill me now if I do get caught.
Abandoning the quest won't hurt anything. You'll be able to pick up another one at the Tip Board. Might get a better one even.
Good Luck

Taking things from drawers and cupboards - the right drawers and cupboards - tends to be much less risky than the picking of the pockets.

Where's Wayrest? Not in Hew's Bane, right? I thought we have to stay there.
I had a lot of those pardons, but I have them on two other charactes who are just starting the Thieves Guild quests. They'll need t hem.
I am mostly mad that even after the game registered my items and told me to go back to further the quest, once I was killed,it ignored all my hard won work. It took me like two hours to even find them.

But that's part of the quest, you have to not only collect them all, you have to get away with it.
But they're stolen items, so if you get caught (before laundering them) the guards will take them from you and then you can't give them to the countess...

Hmm, Santie Claws is clearly an experienced and clever wealth redistribution professional.wenxue2222b16_ESO wrote: »You have to get all the items home and safely laundered - if the guards catch you then all the precious items are gone!
That is why this one thinks that the looting of drawers and trunks is a safer bet for this quest than the picking of the pockets.
Also anything you save and launder can be used for a future quest so even if you think you don't need it now launder it so you have a nice pile of ready laundered items (that the guards won't take) to choose from in future.

If I remember rightly, you don't actually have to steal any items for The Covetous Countess if you already have them. The "stealing" entry is a hint for how to get the items; the objective itself is to obtain clean items. So if you already have them, all you need to do is launder them. If you already have laundered items (eg, from Laundered Shipments), then you only need to deliver them.I dont pick pockets unless I absolutely have to. XD
(meaning unless the quest demands it)

Try to spare items from a few different categories. Like children's toys, euhmm.. wardrobe accessories, devices. Items that have more than one category have the chance to be more useful.
According to the latest edit on UESP -
The requested objects vary as follows:
Drinkware, Utensils, and Dishes
Cosmetics, Linens, and Wardrobe Accessories
Ritual Objects and Oddities
Writings and Maps
Hope this helps, good luck! Personally I think it's the easiest quest of them all

THIS.
Also, you should consider these sets for thieving:
3 piece Nightshade (body, 1 weapon max)
5 piece Night Mother (jewlery, weapons, 1 body max)
4 piece Bahraha (4 medium body = for heists) OR 4 piece Serpent/s Spirit (4 medium body = regular thieving)
Combined with Legerdemain and TG passives, stealing is like taking sweet rolls from milksops.
