I have no problem with a little Cash Store Whale Milking now and again. It's the "limited time only!" thing that really bugs me.
Is it really necessary to play that overt gimmick? I mean the whales will offer their sweet sweet milk regardless and might actually feel less manipulated into doing so.

I can - to a certain degree - agree with Nightmare Courser going for 2500 because it's supposed to be a "unique mount".
I can understand that you'd be selling the Frozen Mare for 2500 (or was it 2000?) because it's unique and has some special features.
But a recolour? It's not even a retexture as is the case with Senche mounts! Why would you do that? I mean, I would totally buy the Snow Bear - I love those damned beasts and as a fan of TLOK, I'd love to be riding one - without hesitation if the price was reasonable. But now? Why? 700 additional crowns because it's white, not brown? (that's racist)

I don't understand why they don't try to sell more for less. Walmart has been very successful with that. Lower the price, more people can afford it, and profit goes up. Like ESO plus, make it $5 a month and I can make a case for it to be in the family budget.

Sure you CAN sell fewer for more, but then most people hate you. That may seem like "just good business" in the short term, but so did the actions of every short-lived tyrant in human history.
Having a disgruntled, toxic community is ever worse for business when marketing a SOCIAL product like an MMO.
If you cater only to the few, eventually the majority will lose faith and move on. Then the few will get bored being milked like the P.T. Barnum whales they are since there's no one left to play with/compare pixels with, and they too leave to seek their validation elsewhere.

I've been subbed since day one until the release of IC, prepurchased imperial edition and bought the DLCs, some mounts and some pets. I've done more than enough to support them (and I enjoy supporting them if I get my money's worth back). This, however, yeah, ... no.
Also, I'm a bit confused people are actually trying to find excuses for ZOS over here. It's actually pretty sad.

Umm...every other console game doesn't require maintaining a server for thousands of people to play on every day. This isn't like every other console game - it requires money for you to be able to continue playing it. If a developer/publisher closes it's doors after you've purchase their game, you can still play it all you want. If ZOS closes its doors or shuts down the servers, that's it.
Think pre-introduction of senche mounts when you'd go to Cyrodiil and the only thing you'd EVER SEE is armies of white horses. And that one guy with the Palamino, and everyone was like "HA! Who'd pay for a Palamino..."
