You will only manage that if you play/grind for a maximum of 100'000 XP per day (which is something like 30 minutes maximum for a slow grind). Currently, there is no possibility to gain more enlightenment than your daily ration.
Tbh, it sounds worse than it is. If you enjoy the stories told by the quests, you will have a very good time leveling through the veteran ranks - at least the first time. I'm now on the third and forth char (leveling both for variety) and I decided to just do the main area questline (for the skill points awarded), dolmens, delves and world bosses. The rest will be done by playing PvP.Honestly now i just want vet ranks gone, they seem like they take too much time to get max rank...

There's nothing "else" to do because that is exactly what there is to do. The problem is that Veteran Ranks were supposed to be a reward for continuing to play past Level 50 and progressing through the endgame content, but when they started locking content behind those Ranks, they became the incentive to play and the content became the reward. Yeah, essentially. And the further you got "beyond" Lvl 50 into either Cadwell's Silver/Gold or PvP, the higher VR you were rewarded. When Craglorn and Trials were introduced as VR11+ content, the gaining of VRs was no longer seen as a reward for progress, but rather a requirement to get to that new content. The removal of VRs, as I see it, is an attempt to remove the negative connotations associated with Veteran endgame and return to a state of "reward for progress" with CPs rather than the "rewarded with content" state that VRs are in.

There is plenty to do. Exploring every corner of world. Funny achievments you probably dont know they exist. Running dungeons, meeting other players, helping them to make game better. During lvls 1-50 you probably were taking from the community more than giving (other players helping you, help from guilds). Now you can start giving. Helping other newbs, returning favors.
When you reach VR, the world is your oyster.

Go to your alliance's major city and start a dance party! I've already been trying this and when it works it's fun and a nice social occasion.
