Topic says it all. Game is being ruined because its soooo easy. Why can i kill things 7- 8 lv's above me with ease. Not just one or two but three mobs at a time 7-8lvs above, and im playing a melee sorcerer. Most times i don't even have to move, just stand still and hit right trigger. Quests have no meaning, i mean who cares what your killing when its all just fluff in your way, a lv 20mudcrab will give you the same fight as a lv 20 Troll. Why would ZOS do this? LVs 1-50 need a huge overhaul

Welcome to what has become of ESO since a crap ton of carebears wanted carebear mode activated! "The game is too hard, I cant win" was all ZoS needed to hear.....those same people crying that the game was too hard are more than likely gone now and never returned anyways.
Since crafting is my only way to make my character look how I want it to look, and crafters are penalized with having to use a lot of skill points, the game is plenty hard for me to complete many quests. I wouldn't be able to play if it was any more difficult than it is now.

My point was that for a new player, it might not be as easy as it is for you. If you find it too easy, you can gimp yourself by using lover level armor and weapons, and not applying those champion points to your alts.

This also means you will not receive in-game warnings. HUD is disabled.

This was done a number of times in beta to certain encounters, but when the game launched it at least provided a moderate challenge to the average player. However, awhile after launch, there was a massive and global nerf to basically everything in the veteran ranks, and the sub-50 gameplay was never really very tough in the first place, only becoming easier with crafted sets and gear ready to buy from other players at a whim. This was a good 8-10 months before the champion system existed, for the people asking "Are you using champion points? Did you take off all your gear?" and other questions. The difficulty level is unfortunately so incredibly low at this point outside of the hardmode Trials, vDSA when aiming for leaderboard topping times, and some circumstances in PVP (against organized groups or extremely overwhelming numbers) that it ends up diminishing the gameplay by quite a bit.
I'd like to see the default difficulty returned towards where it was at launch, and then a scaling slider you could choose from say, six options, ranging from 50%, 100%, 150%, 200%, 300%, and 400% of "normal" difficulty that would scale mobs' health, experience earned, gold earned, loot chances for high quality items or crafting harvests, and exp rewarded from quests/other areas, proportionally. Attacking group content on your own isn't a solution for solo content being trivially easy. Of course, you can just go and do all of what you just mentioned without much issue, too, as Craglorn's difficulty was fairly low upon its release even. Heck, I solo'd one of them before it even hit live pretty quickly... and not long after it hit the live servers, people were posting their videos solo'ing every single last one of those delves. The quest areas were largely also solo'able other than forced mechanics such as requiring people to stand on a floor pad to open a door to the boss, although you could do so if you had people volunteer to simply open the door for you to try.https://www.youtube.com/watch?v=waL1g9_2Oig
