Not sure about the instanced areas (?) but that's an interesting idea. If I had access to an individually owned shop that consistently had stuff I wanted at good prices, I'd like that. Personally, my problem right now is I run around from guild trader to guild trader and it's difficult to find what I want-- and assuming I can, the price is often unreasonable.

I voted maybe, because it would depend on how auction houses were implemented; but lets be honest, I don't think that is going to happen.
I think it would be cool to remove guild kiosks, but make city specific auction houses; but the game would need to create reasons for players at max level to be spread out among the cities, otherwise the "end game" cities will be the trade hubs.
Eve Online stations are a good example, they had markets that items could be bought and sold on; worked well in Eve, but the players were spread out (even though trade hubs did exist in Jita, Amarr, Dodixie and Rens); the problem is ESO is not nearly as large or stratified as Eve Online; and I'm not sure if it ever will be. So this solution is probably over kill for it; but I think it would be better then the guild kiosks which essentially punish smaller/poorer guilds and players who don't like guilds.
If this route was taken for auction houses, I'd like each auction house to have a different rate based upon popularity. The more popular the auction house, the higher the tax on trading there.
Once again, I don't see guild kiosks going away...this is all hypothetical...

This sounds interesting but how would it work? Okay, you're a blacksmith. I come into your store. I don't want to buy what you craft because I can make my own and sell it somewhere else. All I want to buy is your motifs and your materials. You can refuse to sell them but then I don't want to buy your stuff. Remember, everyone in the game can craft to some degree.
Even if that does work, what will you do if I set up shop and start selling my stuff for ridiculously low prices. I mean insanely low. I go for volume and I drive the prices down. How would you control that?

There might be 200 versions of this same instance where people can purchase a house and hire a npc vendor to stand on their front porch and sell their wares. You could even hang sign and select a craft to specialize in.
When searching these instances you should be able to see each of the types of crafters available in each, so if your looking for metal armor or weapons, you search for blacksmith and are able to see which instances have blacksmith vendors. Then you can enter and shop.
For yourself you can have a house, and neighbors, and if you're a great store that always keeps your stuff stocked, people will come from everywhere to shop at your place as you develop a reputation.
I know this is a little old school for many but I would prefer this model to a global auction house.
A global auction house would decimate the economy. GW2 (at least while I played) was an example of how terrible global auction houses can be. No thanks.
People are too familiar with WOW, but those auction houses were (at least while I played) faction/server specific, thus significantly decreasing the corresponding market.
In my opinion, thy just need to make the guild stores more user friendly, perhaps by allowing "saved" searches for items that the player frequently buys (ex.. Materials for crafting).

Good question. You don't. Market competition. Eventually you would develop a reputation for being the cheapest (maybe) and more people would buy from you. Then again, If I offer to be there every Tuesday to make custom goods while people wait and you don't, then your cheap goods which aren't exactly what everyone wants is going to take a hit to my custom sets.

Okay.
I think one of the places where Zeni's design could have been better is in the crafting. I think crafting is way too easy to obtain. I remember back in June of 2014 people were saying, "Oh, if you want to get rich, level up provisioning. You'll be able to sell food for sooo much money."
Then we found out just how hard it was to level up provisioning. If everyone can do it, no one is going to pay for it.
Zeni could have made this viable by making crafting more difficult to level and by not binding "colors" to the individual account. What would really make your sets sell against my cheap ones is if you had colors I didn't have.
That would have been an interesting market to participate in.

Failing that, I'd simply like to see upgraded search functions added to the game itself, more than one guild allowed to occupy a trader (better than more traders imo)......and somehow an allowance for those who don't want to join a trade guild (lots don't) be allowed to sell at traders for say a slightly higher percentage or something (some system that includes them)
Re. the bolded part, yes please! That is basically where I am, I don't want to join a trade guild but still want a reasonable way to buy/sell.
